Low Carb Party Seeds

Preheat oven to 250°F. Melt butter in small saucepan and mix in all spices. In a baking sheet, pour butter and spice mixture over seeds and stir to coat. Bake for 1 hour, stirring every 15 minutes. Spread on parchment paper and allow to cool and dry, allowing paper to soak up extra liquid.

We’re going to keep this one short and sweet as we recover from our post-thanksgiving coma. So I’ve been mentioning in all these squash posts to save all your seeds! Ta da! Here is your explanation why. You can take those nutrient rich seeds and turn them into a delicious, low carb, protein rich snack. Bonus is you can basically use this same recipe to turn anything into a party snack!

This recipe was originally adapted from a standard party mix recipe. You know, the one with the Chex cereal, pretzels, etc. I opted to halve most of the ingredients (because no one needs that much butter). I also found you get a similar flavor by subbing out the butter and using olive oil instead. You could definitely experiment though and try other oils such as Coconut, Grapeseed, etc. You want to pick a healthy fat for this. If you do keep the butter, make sure you are using an irish butter. Trust me, it makes all the difference. 

Peeps, this is such a great snack to have on hand. Even better you took the time and love to make it yourself and you know exactly what is in it! It’s also a huge crowd pleaser and with the holidays and Super Bowl coming, you’ll definitely want to keep this on hand!
